Bean salad and israeli couscous
Ingredients
- 1 bag (4.4 lbs) Arctic Gardens 7 Bean Salad
- 1 cup Uncooked Israeli couscous
- ¾ cup Diced red onion
- 1¼ cup Diced green bell pepper
- 2½ cups Diced Italian tomatoes
- 2½ cups Diced cucumber
- 1¼ cup Diced dried apricot
- 1¼ cup Sliced black olives
- 2½ cups Chopped fresh parsley
- 1¼ cup Fresh cilantro
- ¾ cup Fresh mint
- 1¼ cup Olive oil
- ½ cup Lemon juice
Preparation
1. Cook Israeli couscous according to instructions on package. Rinse with cold water.
2. Steam 7 Bean Salad for 5 minutes. Let cool.
3. Chop fresh herbs in a food processor, pour into a large bowl, and add olive oil and lemon juice. Mix well.
4. Toss all ingredients together and serve cold with pita bread.
