Ingredients

  • 1 bag (4.4 lbs) Arctic Gardens 7 Bean Salad
  • 1 cup Uncooked Israeli couscous
  • ¾ cup Diced red onion
  • 1¼ cup Diced green bell pepper
  • 2½ cups Diced Italian tomatoes
  • 2½ cups Diced cucumber
  • 1¼ cup Diced dried apricot
  • 1¼ cup Sliced black olives
  • 2½ cups Chopped fresh parsley
  • 1¼ cup Fresh cilantro
  • ¾ cup Fresh mint
  • 1¼ cup Olive oil
  • ½ cup Lemon juice

Preparation

1. Cook Israeli couscous according to instructions on package. Rinse with cold water.
2. Steam 7 Bean Salad for 5 minutes. Let cool.
3. Chop fresh herbs in a food processor, pour into a large bowl, and add olive oil and lemon juice. Mix well.
4. Toss all ingredients together and serve cold with pita bread.
