Black Bean and Corn Salsa
Ingredients
- 1 ¼ cup of Arctic Gardens Whole Kernel Corn
- 2 ⅓ cups of black turtle beans, drained and rinsed
- 12 green onions, chopped
- 4 medium tomatoes, seeded and finely chopped
- 2 green peppers, finely chopped
- Vinaigrette of your choice
This recipe can also be done with Arctic Gardens Whole Kernel Corn 1 x 20lbs and Arctic Gardens Supersweet Whole Kernel Corn 1 x 20lbs .
Preparation
- Steam corn for approximately 2 to 4 minutes or until it has reached desired texture. Let cool.
- Put all ingredients in a bowl. Add enough salad dressing to cover well.
- Cover and refrigerate for at least two hours.
- Correct seasoning. Serve as a side dish or appetizer on a bed of lettuce.
- Serve with corn chips if desired.
