1 bag (4,4 lbs) of
Arctic Gardens Bistro Blend

½ cup (4 oz) of canola oil

22 lbs of pork loin

3 tbsp of garlic, finely chopped

4 cups (32 oz) of onions, chopped

4 cups (32 oz) of orange juice
-
¼ cup (2 oz) of lime juice

1 cup (8 oz) of lemon juice

2 cups (16 oz) of honey
-
36 cups of stock
-
1 tbsp of salt
-
1 tbsp of ground black pepper
Preparation
- In a braising pan, heat oil. Season the pork loins with salt and pepper on all sides. Remove the meat and drain the fat from the pan.
- In the same braising pan, sweat the onions and garlic for 2 minutes. Add the honey.
- Deglaze the pan with the citrus juices. Reduce by half. Add the stock and pork loins. Season and cook, covered, for about 1 hour and 30 minutes.
- Remove the pork loin and strain the cooked juice through a sieve. Set aside.
- Cook the Bistro Blend in boiling water or steam for 4 minutes. Drain and set aside.
- In the centre of a plate, arrange the vegetables. Place one slice of the pork (about 6 oz) onto the vegetables and spoon the cooked juice over it.
