Ingredients

  • 10 cups of onions, chopped
  • 5 oz of vegetable oil
  • 3 1/2 cups of rice
  • 24 cups of low sodium chicken stock
  • To taste: salt and pepper
  • 4.4 lbs of Arctic Gardens Mixed Vegetables (4)
  • 1 2/3 cups of 15% heavy cream
  • 2.2 lbs of chicken legs, cubed
  • 2.2 lbs of northern shrimp
  • 1 small bunch of cilantro, chopped
  • 3.5 oz of lime juice

Preparation

  1. Sweat the onions in the oil. Add the chicken stock and bring to a boil.
  2. Add the rice and season.
  3. When the rice is half-cooked, add the chicken.
  4. Wait until the soup comes back to a boil, and then add the vegetable mix and the cream. Continue cooking.
  5. Just before serving, garnish with shrimp, cilantro and lime juice.
