Cream Soup with Vegetables, Chicken and Shrimp

Ingredients

10 cups of onions, chopped

5 oz of vegetable oil

3 1/2 cups of rice

24 cups of low sodium chicken stock

To taste: salt and pepper

4.4 lbs of
Arctic Gardens Mixed Vegetables (4)

1 2/3 cups of 15% heavy cream
-
2.2 lbs of chicken legs, cubed

2.2 lbs of northern shrimp

1 small bunch of cilantro, chopped

3.5 oz of lime juice
Preparation
- Sweat the onions in the oil. Add the chicken stock and bring to a boil.
- Add the rice and season.
- When the rice is half-cooked, add the chicken.
- Wait until the soup comes back to a boil, and then add the vegetable mix and the cream. Continue cooking.
- Just before serving, garnish with shrimp, cilantro and lime juice.
