Fall vegetable soup with maple and curry

Ingredients

2 bags Arctic Gardens Fall Medley 4.4lb
2 tbsp canola oil
1 cup maple syrup
1/4 cup minced garlic
28 cups water
2 oz chicken broth base
2 tbsp curry powder
Salt and pepper to taste
1 cup hot 35% cream, optional
Chopped parsley

Preparation

1. In a pot, sweat the vegetables with the oil for 2 minutes.
2. Add maple syrup, garlic, water, chicken broth base and curry powder.
3. Bring to a boil, reduce heat to medium and simmer for 30 minutes.
4. Blend with a mixer until smooth.
5. Return to heat and season to taste with salt and pepper.
6. Serve in a bowl with parsley and a drizzle of hot cream if desired.
