Fusion mexican soup
Ingredients
- 1 bag (4.4 lbs) Arctic Gardens Fusion Mix
- 3 cups Diced red onion
- 5 tbsp. Chopped garlic
- ½ cup Vegetable oil
- 5 cups Diced red bell peppers
- 5 x 15 oz (2 L) cans Diced tomatoes
- 5 tbsp. Chili seasoning
- 2 tbsp. Dried oregano
- 20 cups Homemade chicken stock

1½ cups Grated cheddar cheese
Preparation
- Heat oil in a large pot and sweat onion and garlic for 3 minutes.
- Add all remaining ingredients except cheese.
- Bring to a low boil and cook for 20 minutes.
- Divide into bowls and top with grated cheddar.
Option: Garnish with baked tortilla strips.
