Ingredients

  • 1 bag (4,4 lbs) of Arctic Gardens Fusion Blend
  • 4 cups of cherry tomatoes, cut in half
  • 4 cups of red peppers, diced
  • 2 cups of red onions, diced
  • 1 ⅓ cup of fresh parsley, chopped
  • 1 ⅓ cup of fresh cilantro, chopped

Dressing:

  • ⅓ cup of rice vinegar
  • ½ cup of olive oil
  • 3 tbsp of sesame oil
  • 1 ½  tbsp of honey
  • 1 ½  tbsp of Miso paste
  • ½  tbsp of soya sauce
  • 4 tbsp of ginger
  • 2 tbsp of fresh garlic

Preparation

  1. Cook the Fusion Blend according to the cooking instructions on the package. Set aside.
  2. In a bowl, add the tomatoes, peppers, onions, parsley, and cilantro.
  3. Incorporate to the Fusion Blend.
  4. Using a food processor, mix all the dressing ingredients together until the texture is smooth and creamy.
  5. Pour the dressing over the vegetables and mix well.
  6. Serve immediately or keep refrigerated.
