Ingredients

Cauliflower Croquettes
1 bag (4.4 lbs) Arctic Gardens Riced Cauliflower
2½ cups Panko breadcrumbs
3 tbsp. Light soy sauce
½ cup Chopped cilantro
1⅔ cups Chopped green onions
5 tbsp. Chopped garlic
5 tbsp. Chopped ginger
5 tsp. Cornstarch
1 tsp. Toasted sesame oil
4 cups Arctic Gardens Chickpeas

General Tao Sauce
1 cup Homemade chicken stock
½ cup Honey
½ cup Rice vinegar
4 tbsp. Low-sodium soy sauce
2 tbsp. Tomato paste
1 tsp. Sriracha sauce
2 tbsp. Chopped garlic
3 tbsp. Cornstarch
5 tbsp. Water

Preparation

1. Preheat oven to 425°F (210°C).
2. Spread cauliflower over four baking sheets covered with parchment paper. Bake for 20 minutes and let cool.
3. Drain chickpeas and reduce to a puree.
4. Mix all ingredients and form into flattened 1 oz balls.
5. Put a bit of oil in a non-stick frying pan and cook croquettes over medium heat for 3 minutes on each side. Keep warm.
6. Mix all sauce ingredients, bring to a low boil, and cook for 3 minutes while stirring.
7. Serve with 5 tsp of dipping sauce per serving.
