Ingredients


Tarragon butter

  • 2 cups (16 oz) of unsalted butter, creamed
  • 1½ tsp of dried tarragon
  • 2 limes, zest and juice
  • 1 orange, zest and juice
  • 1 lemon, zest and juice
  • Salt and ground black pepper to taste

Preparation

  1. In a mixing bowl, mix together butter, tarragon and citrus juice and zest.
  2. Mix well until flavored butter is smooth and creamy.
  3. Spread flavored butter onto a sheet of parchment paper and roll into a log about 1½ in. in diameter. Store in the fridge.
  4. Steam or boil frozen green beans in boiling salted water for 4 to 5 minutes.
  5. In a frying pan, melt flavored butter and sauté hot, cooked green beans. Add salt and pepper.

Note: Ratio of citrus butter for 25 servings of 80 g = +/- 18 g
