Green Beans with Tarragon Butter and Citrus Zest
Ingredients
- 2 bags (4,4 lbs) of Arctic Gardens Extra Fine Green Beans
Tarragon butter
- 2 cups (16 oz) of unsalted butter, creamed
- 1½ tsp of dried tarragon
- 2 limes, zest and juice
- 1 orange, zest and juice
- 1 lemon, zest and juice
- Salt and ground black pepper to taste
Preparation
- In a mixing bowl, mix together butter, tarragon and citrus juice and zest.
- Mix well until flavored butter is smooth and creamy.
- Spread flavored butter onto a sheet of parchment paper and roll into a log about 1½ in. in diameter. Store in the fridge.
- Steam or boil frozen green beans in boiling salted water for 4 to 5 minutes.
- In a frying pan, melt flavored butter and sauté hot, cooked green beans. Add salt and pepper.
Note: Ratio of citrus butter for 25 servings of 80 g = +/- 18 g
