Indian style roasted cauliflower bites with tahini and cilantro sauce
Ingredients
- 2,2 lbs Arctic Gardens Cauliflower Med (frozen)
- 2/3 Cups (5 onces) olive oil
- 2 tsp ground cumin
- 3 tbsp Garam masala
- 1 tsp cayenne pepper, to taste
- Salt and pepper to taste
Tahini and cilantro
- 5 Cups plain yogurt
- 1 Cup + 2 tbsp (9.5 onces) tahini (sesame paste)
- 1 Cup + 2 tbsp fresh cilantro, to taste
- 1/3 Cup lemon juice
- 2 tbsp garlic, chopped
- Salt and pepper to taste
Preparation
- In a bowl, combine frozen cauliflower, oil and spices (pre-mixed). Season with salt and pepper to taste and mix well.
- Spread the cauliflower onto baking sheets (don't crowd them).
- Roast on high (450 °F) for 30 minutes or until cauliflower is golden brown, turning after 15 minutes.
- Meanwhile, prepare the sauce. In a blender, puree sauce ingredients until smooth. Set aside.
- Serve the roasted cauliflower bites with the yogurt sauce.
