Roasted brussel sprouts with apples
Ingredients
8.8 lbs (35 cups)
Arctic Gardens Brussels sprouts
1 cup olive oil Salt and freshly ground pepper to taste
1 1/2 cups maple syrup or honey
1 1/2 cups cider vinegar
1/2 cup olive oil
1 can 2.84L of legumes mix
1.5 L cooked quinoa
12 apples, diced
4 cups crumbled feta cheese
1 1/2 cups roasted pumpkin seeds
Preparation
1. Preheat oven to 475°F (240°C).
2. Coat Brussels sprouts with olive oil and season to taste. Place on parchment-lined baking sheets and bake for 15 minutes.
3. In a large bowl, mix maple syrup or honey with vinegar. Reserve half and add remaining oil.
4. Add the drained and rinsed legumes blend and quinoa to the bowl. Coat with syrup-vinegar mixture. Season to taste and arrange on baking sheets with Brussels sprouts. Cook for 5 minutes or until Brussels sprouts are well roasted.
5. Serve with diced apples, crumbled feta, roasted pumpkin seeds and drizzle with reserved vinaigrette.
