Ingredients

1/2 bag (1 lbs) Arctic Gardens California style Blend
2 tbsp sesame oil
2 tsp chopped ginger
1 tbsp minced garlic
1 lb ground pork or tofu
2 cups chopped fresh cabbage
1/2 cup green onions, chopped
1/3 cup tamari or soy sauce
1/3 cup hoisin sauce
Salt and pepper to taste
2lbs round dumpling pasta

Sauce
1/3 cup green onions, finely chopped
1/3 cup cilantro, chopped
2 tbsp garlic, minced
1 tbsp ginger, chopped
1/4 cup  chopped roasted peanuts
2 tbsp toasted white sesame seeds
1/4 cup raw or powdered sugar
2/3 cup light soy sauce
1/2 cup rice vinegar
2/3 cup chili oil, optional
2 tsp toasted sesame oil

Preparation

1. Defrost the California blend in the microwave for 3 minutes, then pulse in a food processor to reduce the vegetables to small pieces.
2. Heat the sesame oil, ginger and garlic in a large frying pan. Add the ground tofu or pork and cook for 2-3 minutes.
3. Add shredded vegetables, cabbage, green onion, tamari sauce and hoisin sauce. Fry for 5-6 minutes. Adjust seasoning with salt and pepper to taste.
4. Let mixture cool, then shape into dumplings. Top each dumpling with 1-2 tsp of mixture, brush edges with a little water and fold over. Press edges well together.
5. The dumplings can be baked in two different ways:
- For a softer result, place the dumplings in a frying pan with a little water. Cover and cook for 5 min, turning over halfway through. You can eat them as they are, or brown them in a frying pan with a little oil.
- For extra-crisp dumplings, spray with oil and bake for 10 minutes in a combi oven at 390°F / 100% humidity and maximum convection.
6. To prepare sauce, simply mix all ingredients, adjust seasoning to taste.

* It is possible to prepare the dumplings in advance and freeze them.
