Warm pasta salad with peas, tomatoes & feta
Ingredients
12 cups dry shell-type pasta
1½ bags
Arctic Gardens
Garden Peas
8 cups cherry tomatoes, cut in half
8 cups arugula
4 cups Feta Cheese cubes
1 cup diced red onion
2 cups chopped fresh basil
Balsamic cream (optional)
¾ cup olive oil
1 cup balsamic vinegar
1⁄4 cup French shallots or red onions
salt & pepper
Preparation
1. Cook peas according to package directions. Run under cold water to cool and set aside.
2. In a large saucepan, cook pasta according to package directions. Drain and set aside.
3. In a bowl, prepare the dressing by mixing all the ingredients (oil, balsamic vinegar, French shallots, salt and pepper to taste)
4. In a large bowl, mix pasta, peas, tomatoes, arugula, cheese, onions and basil.
5. Pour dressing over pasta mixture and toss well.
6. Place warm salad on a serving dish and drizzle with balsamic cream before serving.
